Food Gases

Contact with air can cause physical, enzymatic, microbiological and chemical spoilage on foods. It may cause bacterial growth and mold growth on the products. Modified atmosphere packaging (MAP) is a gas or mixed gas packaging process with protective properties for foods. The gases used in MAP take the place of the air in the package and prevent deterioration in the products in a short time. Food gases are obtained from mixtures of Nitrogen, Ethylene, Carbon Dioxide and Oxygen in varying proportions depending on the type of food, for almost all foodstuffs. These mixtures not only protect the food from negative effects, but also make the external appearance of the food more vivid, increase the yield by extending the shelf life of the food.
